Baked Delicate White Peaches
Nothing could be easier than this dessert, White peaches remind me of my childhood and a pretty prolific back yard peach tree that I would climb and sit in while eating sun warmed peaches.
I was at the Organic market the other day and some spectacular white peaches had just come in, I bought too many and ended up using the overflow in this desert.
- Halve peaches
- Wipe a smidge of rice malt/maple syrup on the surface and a good squeeze of lemon juice. The lemon juice is to stop the white peaches oxidizing and the rice malt is not for sweetening but rather to colour up the surface of the fruit in the oven. if you are on a strict Paleo diet you can omit the sweetener and still have a delicious dessert.
- Turn your oven up as a high as it will go and blast the peaches for 15-20 minutes, you don’t want them to fall apart, just get a bit of colour and soften.
- I’ve topped mine with my Lemon Granola because I like the hint of lemon with the peach flavours.
- If you don’t have any just crumble up some walnuts or macadamia nuts and warm them through on top of the peaches for the last 5 minutes of cooking.
