Cashew Lemon and Chia Squares

When it comes to dessert I am a self confessed chocoholic, which is why so many of my dessert inventions are, well chocolate! A very close second for me however is lemon; these squares come from my quest to have a healthy lemony treat.

  • 2 cups cashews soaked in the fridge overnight
  • 2 Tbsp finely zested lemon rind
  • ½ cup coconut nectar (you could use rice malt or maple syrup instead)
  • The juice of 1 lemon
  • 1 cup chia seeds
  • ½ cup pumpkin seeds
  • ½ cup walnuts
  • 1 cup currants
  • ½ cup coconut flakes
  • ½ cup melted coconut oil

 1.    Strain the soaked cashews, pulse in a blender till pureed with the coconut nectar, lemon zest and lemon juice

2.    When smooth add the melted coconut oil, blend till evenly mixed

3.    Tip everything into a bowl stir through the rest of the ingredients (reserve some nuts/seeds/coconut for the topping)

4.    Pour into a paper lined 25cm square tray

5.    Top with the reserved nuts and seeds

6.    Set in the fridge overnight
