Do You Think You’re Too Busy to Eat Well – Think Again! Three Healthy Options from One Simple Recipe

You want to do the right thing, want to eat well, feel well, and not undo all your hard work at the gym. Then you get home from work late in the evening and a pizza sounds like a solid plan!

Here’s one recipe that you can make into at least 3 different meals!

All Paleo friendly, low Carb, and delicious.

Ingredients:

  • Ask your butcher to mince 6 organic chicken breasts
  • 1 Tblsp minced ginger
  • Curry powder of your choice, just follow the suggested amount for how much weight in chicken you have.
  • 2 Tblsp powdered organic Turmeric
  • 1.5 Tblsp coconut oil
  • 2 Tblsp water
  • Sea salt to taste
  • Cayenne pepper optional if you enjoy a spicy dish
  1. In a wok, over a low heat melt the coconut oil, gently sauté the spices and the ginger till fragrant taking care not to burn
  2. Add all the chicken mince, and water, mix well
  3. Cook gently stirring occasionally till cooked through, it should only take 10-15 minutes depending on your wok size and heat.

Option one. San Choy Bow-

  • Iceberg lettuce cups (cut iceberg lettuce in half and wash)
  • Bean shoots
  • diced cucumber and capsicum
  • fresh herbs, I used coriander and mint
  • Toasted coconut flakes, you could also use crushed nuts.
  • Precooked Mince

Method-

  1. Heat mince
  2. Put cups on your plate, top with mince
  3. Put all your other ingredients on the top, sprinkle with cayenne if you enjoy a hotter dish
  4. Eat!!!!

 

Option two. Sheppard’s pie-

  • 1 cauliflower
  • ¼ cup coconut cream
  • 1 egg yolk
  • Seasoning
  • Precooked Mince

Method-

  1. Boil cauliflower till soft
  2. Drain well, press out the water so it’s quite dry
  3. Put salt, pepper (to Taste) cauliflower and coconut cream in the blender
  4. Puree till smooth
  5. Place mince in a baking dish and top with cauliflower
  6. Brush with egg yolk
  7. Bake 40 mins at 180

*I have this in the fridge and my husband pops it in the oven when I work late, so it’s ready as I walk in the door. I then chuck some salad greens on the side. 

Option three: Curried chicken and zucchini noodles-

  • 3 zucchini’s turned into noodles (I have a tool from the Chinese Grocer, under $10 to buy and its changed my life with pasta- actually tastes better than noodles)
  • Toasted coconut flakes
  • 1 lime
  • Cayenne pepper to garnish
  • Precooked Mince

Method-

  1. Make the noodles, takes a couple of minutes
  2. Throw the chicken mince lime juice and noodles in a wok
  3. Wok toss till heated through this is enough to cook the zucchini
  4. Top with coconut flakes and cayenne pepper.
