Jaffa Mousse


This is totally delicious and a little cheeky! I had leftover frosting in the fridge from my Jaffa cake and discovered that it made one of the nicest chilled chocolate mousse’s I’d had in a very long time, a few segmented oranges on top and we were good to go, what a lovely surprise.

  • 250 grams cashews soaked till soft overnight, discard water (you can speed this up by pouring boiling water on nuts for 1/2 hour)
  • 2 squeezed oranges
  • 1 orange zest
  • 2/4 cup cocoa
  • 1 cup rice malt
  • 1/4 cup granulated stevia

Blend everything till smooth and then rest in the fridge till cold, if you cant wait pop it in the freezer for awhile….
