Paleo Almond Hummus
This is a great way to include some extra protein in your diet. Also a winner if you’re on the Paleo diet or if you are intolerant to pulses/legumes and you miss the taste of hummus.
- 2 cups soaked blanched almonds (the longer you soak them the easier they are to puree, I pop them in the fridge overnight)
- 2 Tblsp Olive Oil
- 1/3 cup Tahini
- ¼ cup lemon juice
- ¼ cup water
- Season to taste
- 1 tsp cumin powder
- 1 tsp lemon zest
Blitz till the consistency is similar to regular hummus.
I love this as a snack with vegetables; it’s also divine with grilled lamb fillet and salad.
