Paleo Black Forrest and Chocolate waffles

Ingredients:

  • Soak 250g Cashews for 24 hours
  • 1 tsp GF Baking powder
  • 1 cup almond milk
  • 4 Tbsps. Granulated stevia
  • 3 Tbsps. Melted coconut oil
  • Dash of “real” vanilla extract
  • 6 Tbsp. raw cacao powder
  • 3 eggs
  • 3 Tbsp. real arrowroot flour
  • ¼ cup pitted quartered cherries
  • Additional cup of cherries to serve
  • 2 Tbsps. coconut flour

Method:
1. Place everything except the coconut oil and cherries in the blender, puree till well mixed
2. When everything is mixed add the coconut oil blend till combined
3. Fold in ¼ cup of cherries
4. Heat waffle iron on the low setting
5. Brush with coconut oil when it comes to heat
6. Pour batter into pan
7. Keep an eye on them they will burn faster than a conventional batter

Chocolate drizzle

  • 2 Tbsp. Coconut oil
  • 2Tbsp. rice malt syrup
  • 2Tbps. raw cacao powder
  • 1 Tsp. coconut yoghurt or coconut cream


Method:
1. Melt coconut oil and rice malt syrup
2. Take off heat
3. Add cocoa and coconut yoghurt or cream and whisk till very well combined.

Putting it all together:
Stack up a couple of layers of waffles and place warmed pitted cherries on the top.
Drizzle with chocolate, you want it to pour and cascade all down the sides
Top with a big spoon of coconut yoghurt
