Paleo Spice Rubbed Chicken with Grilled Lemon + Veg


This is a very low maintenance but impressive looking dish, the spice rub can be made up and stored in a airtight jar for months.

Organic chicken Breast
Vegetables, (I have used asparagus and red cabbage because that is what I had in the fridge, you can use anything)
Good quality Olive Oil
Sea salt
Spice rub:
• 1 tablespoon ground cumin
• 2 teaspoons smoked paprika
• 1 teaspoon ground cinnamon
• 1 teaspoon turmeric
• ¼ teaspoon cayenne pepper
• 1 teaspoon sea salt
• 1 teaspoon dill leaf tips dried
Take 1 organic chicken breast per person, rub all over with the spice blend
Grill chicken and also grill the lemons you will be surprised how much extra juice comes out of them.
Steam your Vegetables
Lay everything out on a wooden Chopping Board, drizzle with olive oil and sprinkle with Sea salt
