Raw Gluten Free and Paleo Pecan Pie

  • Pecan Pie
  • Base:
  • 1 cup almond meal
  • ¾ cup coconut flour
  • 1 tsp cinnamon
  • 1/3 cup coconut oil, melted
  • 2 pitted dates

Put everything in the blender until evenly mixed, press into a lined tray

 Filling:

  • 450 grams soaked dates
  • 2 large cooked green apples
  • ½ cup coconut oil, melted
  • 1 scraped vanilla bean
  • Pecan nuts

Put everything in a blender until everything is a smooth puree, I did this while the apples were still hot, I’m an impatient cook!

Spread evenly onto the base and top with pecans in whatever pattern you like!!

You will need to set your pie in the fridge till the coconut oil stiffens.

This is such a rich dessert I served it with whipped coconut cream on the side.
