Low Sugar GF Christmas Cake


Maya Angelou said you can tell a lot about a person by the way they handle 3 things, rainy days, lost luggage and tangled Christmas lights. Well while I find the first 2 a piece of cake (see what I did there…) as you can see by the photo that is a glorious tangled mess of fairy lights, well lets just say I bought new lights!

Where has the year gone?! In only a few weeks we will be celebrating Christmas and even in our (hopefully) sunny country its nice to have a traditional Pud and cake.

So in the spirit of Christmas and in the spirit of staying healthy during the silly season, Ive invented this delicious cake to share with you. We have steamed up the leftovers which makes the cakes texture turn into a pudding, if there are any leftovers Im going to roll them and coat them in a Homemade chocolate truffle.

  • 1 Orange
  • 6 eggs
  • 1 cup rice malt syrup
  • 1/3 cup Raw Cacao
  • 2 tsp Allspice
  • 1 tsp powdered ginger
  • 2 cups almond meal
  • ½ cup coconut flour
  • 2 cups mixed dried fruit soaked in ¼ cup Cognac or Brandy (I used Wild Figs, Currants. Prunes and White Mulberries) you can use any dried fruit you like but to get the lovely rich fruit cake taste make sure you add at least ½ cup pitted prunes


  1. Boil orange till soft
  2. Place Orange and everything EXCEPT the soaked fruit in a blender puree till soft
  3. Fold in the soaked fruit
  4. Bake at 180 degrees for 1.15 hours or until a skewer comes out clean when poked in the middle
  5. I’ve served mine with coconut yoghurt and fresh Raspberries
