The Easiest Gluten Free Cake in the World

  • 2 oranges
  • 3 eggs
  • 3/4 cup sweetener of choice (I usually use Stevia or coconut sugar)
  • 300g almond meal
  • 1 tsp baking powder
  1. Preheat oven to 170 degrees C.
  2.  Grease a 22cm cake pan.
  3. Place whole oranges into a saucepan bring to the boil and simmer for 15- 20 mins or until a knife passes easily through them.
  4. Drain oranges, chop roughly.
  5. Put everything into a blender and blend till smooth.
  6. Pour into pan and bake for 1 hr. It’s ready when your skewer comes out clean.
  7. Freezes well.
  8. It’s really rich so you don’t need much I like to serve it in the spring with edible flowers and coconut flakes.
